Forty-year-old Ann Marie Roche, Baskin Lane, Cloughran, Swords, Dublin has already tendered a not guilty plea to four charges arising from an incident at Center Parcs, Newcastle Road, Longford on June 10 and June 11 last year.
The Dubliner initially appeared in court back in May to face two assault causing harm charges and two separate public order charges.
On that occasion, Judge Bernadette Owens was told while no medical reports were at hand, the case centred on two separate bites to the thumb area and palm of a security guards left hand.
The court was told both alleged bites punctured the skin of the alleged victim.
When the case was called last Tuesday week before Judge Owens, the court was told Ms Roche would be seeking a hearing date.
Asked by Judge Owens how long the case would likely take, Sgt Mark Mahon, for the State. implied both prosecution and defence submissions would take a “minimum of an hour”.
The case was consequently adjourned to a sitting of Longford District Court on January 30, 2024.
