Offaly artisan food producer to address University of Third Age meeting

ORGANIC farmer and artisan food producer, Margaret Edgill of Mount Briscoe Farm, Daingean, will be the guest speaker at the February U3A (University of Third Age), meeting, on Wednesday, February 18, at 7.30, in the Bridge House Hotel.

She is a graduate from UCD Michael Smurfit School of Business with an MBs specialising in tourism. After a career in the Arts and Event Management sector spanning 13 years, Margaret returned to the family farm in 2012, where she has been pioneering in her capacity to innovate. Margaret’s own farm diversification strategy has been centred on connecting food and farming harmoniously.

Since taking over the farm, she has expanded its offerings to include charming B&B and glamping accommodations, blending sustainable farming with hospitality. Margaret is passionate about showcasing her farm’s organic produce and promoting eco-friendly tourism, providing guests with an authentic rural experience.

In 2023 Margaret, one of only a few in this country, was awarded a Nuffield Scholarship with her study topic being Agriculture & Tourism: Paving the Way for Farm Diversification and Rural Prosperity. Under her stewardship, Mount Briscoe has won several international and national awards for hospitality. These awards relate to the agritourism initiatives that Margaret commenced at Mount Briscoe.
