The EPA (environmental protection agency) estimate that each of us thrown away about 100kgs of food waste each year – that the equivalent of one chunky rugby player!

It is important when you are handling leftovers to do it safely, tips for doing this:

* Any food to be used as leftovers should be cooled as quickly as possible

* Cover your leftovers and put them in the fridge, within 2 hours of being cooked

* Leftovers should be eaten within 3 days

* Always reheat leftover until they are piping hot all the way through

* Never reheat foods more than once

Spicy quick turkey rice

.

Ingredients

2 teasp vegetable oil

2 beaten eggs

1 red chilli – sliced

2-3 spring onions - chopped

300g cold cooked rice

2 tbsp soy sauce

2 tbsp chilli sauce

85g frozen peas

2 thick slices (Christmas) ham - chopped

100g/ 4 oz leftover turkey – shredded

Method

1.In a wok, heat 1 teasp of oil, add the beaten egg and swirl to coat the base of the pan and allow to set to an omelette, flip and cook for 1-2 mins. Break the ‘omelette’ up, remove from the pan and set aside

2.Heat the remaining oil in the pan, stir fry the chilli and spring onions for 1 minute

3.Add all of the remaining ingredients and the egg, heat through, until piping hot

4.Serve immediately with some extra soy and sweet chilli sauce
